In the classic texts of Ayurveda, ghee is never referred to as merely "clarified butterfat". It is revered as Ghrita—the supreme Rasayana capable of increasing Ojas (vital essence), nourishing Dhatus (body tissues), and pacifying Vata and Pitta doshas. However, these healing properties only awaken when ghee is prepared through the rigorous 5 Vedic Sanskaras (transformative stages).
The journey begins with fresh morning milk drawn from indigenous Sahiwal and Gir cows grazing freely on open organic pastures. The calves are always fed their full share first. The raw whole milk is slowly boiled in wide earthen vats over low dried cow dung or neem wood embers.

Once the milk cools down to body temperature naturally, it is inoculated with traditional curd culture (Jaaman) containing live indigenous lactobacillus strains. It is allowed to ferment undisturbed overnight in clay pots for 12 to 16 hours.
During this fermentation, lactose and milk sugars are completely broken down by probiotic bacteria into lactic acid, rendering the finished ghee essentially zero-lactose and gut-friendly.
At sunrise during the Brahma Muhurta, the whole cultured curd is placed in tall clay vessels. A two-way grooved wooden churner (the traditional Bilona or Mathani) is spun clockwise and counterclockwise using rope pull.
"Why bidirectional? Clockwise churning generates positive kinetic heat, while counterclockwise churning cools and balances the molecular structure. This rhythmic friction causes the milk fat globules to bind into pure cultured butter (Makkhan)."
The golden lumps of cultured butter float gracefully to the surface. Artisans gently skim this Makkhan by hand, separating it from the nutritious probiotic buttermilk (Chhachh).
The butter is washed in cool well water to remove residual acidic whey, ensuring clean preservation and supreme aroma during melting.
The washed cultured butter is transferred into an earthen pot and placed over a very slow, controlled flame. As moisture steadily evaporates, milk solids settle gently at the bottom without caramelizing or burning.
When the liquid turns brilliant translucent amber and releases the signature nutty, granular aroma, it is immediately taken off the fire and strained through fine muslin cloth into glass jars to crystallize naturally into granular beads (Danedar texture).
